Shelby Cookie Bar Recipe

Preheat oven to 350F.


1 ½ c. all-purpose flour
1 c. sugar
½ c. butter, softened
1 tsp. vanilla
2 eggs, lightly beaten

Mix flour, sugar, butter, and vanilla until crumbly. Add eggs and stir until soft dough forms.
Press into a well-greased 13×9 pan.
Bake 15 min.


2 eggs, lightly beaten
1 tsp. vanilla
¼ tsp. salt
½ tsp. baking powder
1 ½ c. mini marshmallows
1 ½ c. shredded coconut
1 c. milk chocolate chips

Whisk together first 4 ingredients. Add marshmallows, coconut, and chocolate chips.
Spread evenly on crust when it comes out of the oven.
Bake 10 to 15 min. or until top is lightly browned and set.

Top with 1 c. milk chocolate chips and dig right in! (Or, if you have a will of iron, let it cool and cut into small bars) 🙂

Chicken meatballs

I’ve been told these are best meatballs I’ve ever made 🙂 I’ve experimented with different things for a while now… but these are definitely my favorite!

2 lbs ground chicken
1 ¾ c. unseasoned breadcrumbs
2 eggs, beaten
¼ c. milk
1 teaspoon salt
¾ teaspoon garlic powder
1 teaspoon dried basil
1 teaspoon dried oregano
3 tablespoons BBQ sauce

Preheat oven to 425.
Mix all ingredients. Drop tablespoonfuls of mixture on well-greased baking sheets.
Cook for 15 – 25 minutes, turning once.
Makes 30 to 35 meatballs

Creamy tomato soup

Puree together:

1 (14 oz) can No salt added, diced tomatoes
1 (6 oz) can tomato paste

Pour into a saucepan.


1 (12 oz) can evaporated milk
3 cups of water
1 teaspoon salt (add more or less to suit your tastes)
1 pkg artificial sweetener (I use Equal) or 2 teaspoons sugar
¼ teaspoon garlic powder
1/8 teaspoon mustard powder
1/8 teaspoon curry powder

Heat on medium until boiling, stirring frequently.
Serve immediately.

Healthy cooking?

So, some of my friends have to eat super healthy (as in low-fat, low-salt and low sugar) and I have been experimenting with a ton of new recipes but my greatest successes appear to be what I (or my friend Bella) come up with when there is no recipe, for instance tonight’s menu consisted of gyros, creamed corn, carrots, and for dessert; homemade (low-sugar) apple butter on wheat toast. If you know what a gyro is then you know they should have cucumber sauce, so here is mine and Bella’s recipe for low-fat and low-salt cucumber sauce:


1 cucumber, ground up ’til it’s like mush (don’t you love my wording)

1 container low-fat sour cream

1 1/2 tablespoons ranch seasoning

2 teaspoons onion powder

1 teaspoon garlic powder

Mix all ingredients and chill for at least an hour.
